Thawing Method Thawing by self-heat generation inside the product by high frequency Steam is supplied to the thawing room to thaw the product in a highly humid state.  Heat transfer by conduction is not very good for the product The frozen product is immersed in a water tank to thaw it.  A lot water is needed and waste water treatment facilities are costly.
Hygiene Little dripping occurs, and processing is hygienic since no water is used. Drips fall onto the floor, which is not hygienic. There is the risk of water penetration thru pinholes, which is very unhygienic.

Thawing State Uniform thawing to the center is possible regardless of product thickness.  Also, little dripping occurs. Setting a short thawing time results in the product heating up, and setting a low product temperature increases thawing time. The thawing state varies considerably depending on the temperature of the water used and the amount of running water.  Quality is easily influenced by the season and the operator.
